  • The active compounds in saffron are water soluble, but can take from 30 minutes to 24 hours to extract the maximum benefit.

SAFFRON SYRUP

A great tasting sauce for Ice cream or pancakes.

Ingredients:

1/2 tsp. saffron threads

1/2 cup hot water

1 cup sugar

2 tsps. Fresh orange juice (strained)

3 star anise

4 cardamom pods- bruised

1 cinnamon stick-broken.

Method:

Infuse saffron in hot water for 2 hours

Combine infusion & sugar in small saucepan.

Stir on low heat until sugar dissolves.

Add other ingredients & boil then simmer for 10 mins.

Cool & Strain

Syrup can be stored in fridge for 2 weeks

BEAUTY BENEFITS of SAFFRON

Saffron has many health and cosmetic benefits. For a radiant,glowing complextion try the following beauty mask :-

Ingredients:

Saffron:  3-4 strands

Sugar: A pinch

Plain bread: a small piece

Milk: 1 teaspoon

Water: 1 teaspoon

Olive oil: 2-3 drops

Method:

Take a small bowl and pour in water. Add saffron steep overnight. Next day add milk and oil.

Take a small piece of bread and dip into mixture and wipe on face. Leave for 15 minutes then rinse clean with warm water.

This mask helps the following:

Reduces dark circles

Freshens and smooths skin

Reduces fatigue lines and delays wrinkles

Soothes nerves and relieves tension

Stimulates blood circulation, resulting in an enhanced glow

SAFFRON RICE

For a favour infused rice based hearty meal.

Ingredients

8 Saffron threads

1/2 cup hot milk

150gms rice

30 gms Butter

3 cardamom seeds

1/2 cup cold milk

300 gms peas

Method

Steep saffron in 1/2 cup hot milk and leave for at least 2 hours.

Partially cook rice in water for 5 mins then drain.

Add butter & cardamom to pan, heat & add rice, saffron milk & further cup of cold milk.

Bring to boil, add peas & salt/pepper to taste & cook for further 5 mins.

Optional

Add mint, raisins & toasted walnuts to garnish
